My New Path

I just wanted to update everyone on the past two weeks. My discharging continued to get worse and I was not getting any relief from the things John was telling me. I got to the point that I was in so much pain that I only sat in a chair and got so weak that I could barley walk. A friend came over one day and said I looked yellow. That got me scared enough to come up with a new path. I met a lady from orange county who used Mina Dobic as a counselor. She was a women who healed herself from Ovarian Cancer. She lives in Carlsbad and saved this ladies life. That is when I decided to change counselors and get someone closer to home. I was in so much pain I was giving up hope and even decided to sign up for hospice because I did not want to live this way anymore.

My husband and I met with Mina and she said I had a good chance of beating this as long as I did exactly what she told me to do. She gave me an exact diet and a bunch of home remedies to help with the discharge pain. She said I had to get off all pain medications. It has been the worse pain I have ever gone through. The only way to get any relief was to use hot towels on my back and stomach. I have a support group of people taking care of me right now. My husband took off a few weeks, my sister is coming every day and a group of friends that have been taking turns helping out in many ways.

Every day is getting a little better. I will not say it is easy but I do have a will to live and don’t want my time to be over. I am fighting the hardest battle I have every fought. I just pray everyday for the strength to endure the pain and suffering this route is taking. I will try my best to keep my blog updated. If I miss a week it may be a bad week for me and I will update as soon as I can.

My Follow Up

As I have shared for the past several weeks that I have been in a lot of pain. This morning I spoke with my Macrobiotic counselor. He decided to take me off the vitamin C because it was not working for me. He has me drinking two different types of teas at this time. One is for the stomach and the other is for the joint pain. I had two drinks of the black soybean tea for my joints yesterday and I could really feel the difference. I also drank the Ume-Sho-Kuzu drink for my stomach and I felt so much better. He has me drinking the Umiboshi tea for 10 days. Then he wants me to call him in a week. Below is a copy of the recipes. If you experience nausea the top tea is really good for that. You can get all the ingredients at Sprouts in Temecula.

UME-SHO-KUZU

To strengthen digestion and restore energy; to strengthen intestinal condition; good for stomach problems

  1. Dissolve one heaping teaspoon of kuzu with a couple of teaspoons of cold water.
  2. Add diluted kuzu to one cup cold water.
  3. Add the pulp of ½ – 1 umeboshi plum to the water and kuzu
  4. Bring to a boil, stirring constantly to avoid lumping, until the liquid becomes translucent. Reduce the flame and simmer until translucent.
  5. Add from 1/2 – 1 teaspoon of shoyu/soy sauce and stir. Simmer for 1-2 minutes longer. Drink while hot.

BLACK SOY BEAN TEA

To relieve joint pain.

  1. Place one cup of beans in a pot and add 3-4 times more water with one 1” strip of kombu.
  2. Bring to a boil
  3. Reduce flame to low and simmer for 30 minutes to 1 hour.
  4. Strain out the beans and drink the liquid while hot.

Vitamin D

After researching more on Breast cancer I have learned that vitamin D plays a part in breast cancer. I am now taking liquid Vitamin D every day. If you are not sure if you are deficient you can have your Doctor test you to find out.

Women who had a vitamin D deficiency when they were diagnosed with breast cancer were 94% more likely to have their cancer metastasize and 73% more likely to die within 10 years, Canadian researchers reported Thursday.

The team also found that only 24% of the women in its study had what are normally considered adequate levels of vitamin D at the time of the diagnosis.

The study represents “the first time that vitamin D has been linked to breast cancer progression,” said Dr. Pamela Goodwin of Mount Sinai Hospital in Toronto, who led the study.

The results are “very provocative,” said Dr. Joanne Mortimer, a breast cancer specialist at City of Hope Comprehensive Cancer Center in Duarte, who was not involved in the study.

“There is some evidence that some of the drugs we use to treat breast cancer, such as aromatase inhibitors, need vitamin D to be activated and metabolized.”

Some women who take the drugs get joint aches, Mortimer said, and when they are put on vitamin D, “they get better.”

Experts cautioned, however, that it was too soon to recommend vitamin D supplements as a general treatment for breast cancer.

“We have no idea whether correcting a vitamin D deficiency will in any way alter these outcomes,” said Dr. Julie Gralow of the University of Washington, who was not involved in the study.

The study was released by the American Society for Clinical Oncology. It will be presented next month in Chicago at the society’s annual meeting.

Separately, a team from UC San Diego reported Thursday in the Breast Journal that global breast cancer incidence was linked to the amount of sunlight received annually. The skin makes vitamin D when exposed to sunlight.

The vitamin is also found in certain foods, but in a less effective form than the vitamin D manufactured by the body.

Earlier studies have suggested that vitamin D may prevent prostate and colon cancer. In laboratory dishes and animals, the chemical blocks the formation of new blood vessels feeding tumors and interferes with the growth of abnormal cells.

About 215,000 cases of breast cancer are diagnosed in the United States each year and 41,000 women die from it.

In the Canadian study, sponsored by the Breast Cancer Research Foundation, Goodwin and her colleagues studied 512 Toronto women who were diagnosed with breast cancer between 1989 and 1995, using stored blood samples taken at the time of diagnosis.

Adding to the Regimen

I have had a few bad months with my my recovery. The detox symptoms have caused me pain and has put me down on the couch for the past few weeks. During this time I received a call from a previous coworker. She informed me of a supplement that she heard about. She explained that this man named Harry had recovered from terminal cancer with this product. I was very skeptical with the information. October Awareness

Here it is October Awareness Month. We will be seeing pink ribbons all around us once again. Hopefully everyone is getting their mammograms done. In addition, to self examinations. I wish more importance was place one nutrition and exercise. It appears that breast cancer is on the rise. Over the last decade the numbers have increased a lot. All I can say is that I have learned much in the past seven years of being a breast cancer survivor.

If you have dense breast the importance of self exams are very important. In addition to demanding an ultra sound examination in addition to your mammogram. Or the new digital mammogram machine that is likely to pick up a lump better than the regular machines.

I have also leaned after attending the Kushi Institute the impact dairy, sugar and meat has on breast cancer. Not one doctor ever mentioned nutrition during my treatment for breast cancer seven years ago. After six years the cancer metastasized to other parts of my body. Because of the poor prognosis I have chosen to do a more holistic approach to my treatment.

In addition to the Macrobiotic diet, I am doing chiropractic, acupuncture, massage and group support. This week was a much better week for me with my detox symptoms. I still have my discomfort but not to the degree of the past several weeks.

Fall is in the air today and I have placed a lot of importance on doing my daily walks. The fresh cool air is refreshing after much of the warm summer days previously.

LA Support

It been another difficult week with the discharging. I met a nice girl when I went to the Macrobiotic Conference. She had told me of a group in LA that meets a few times a year. They have cooking classes with a top Macrobiotic Counselor name Warren Kramer. On Saturday he gave a cooking class on how to make Nori rolls and a class on facial diagnosis. When we ate lunch I explained that I had been managing the discharge pain with advil. However he a few other people at the group said that it would slow down the process and was not advised to do that. So on Sunday I tried to manage the pain with nothing but vitamin C. Needless to say the pain was so severe that I could do nothing but lay on the couch. I could not eat or sleep. I knew I could not live this way so I went back on the advil. I found a good article online about the detoxing off of the old foods and how it effects our body. I also met a lady named Susan at the group in LA. She told me that my discharging was normal. She had lung cancer and lymphoma twelve years ago and had these symptoms for up to six months. After sixteen months of being on the diet she was completely cancer free.

2. Some Unpleasant Symptoms And Their Causes

Suppose you have made the decision to change your diet and improve your health. You understand how the body heals itself and you are more aware of its needs. Yet, you may not have complete faith in your body.

A splitting headache, chills, nausea, a dripping nose, increased body odor, reappearance of old aches and pains, rashes, boils, drastic weight loss—all the symptoms that can shake the faith of the most sincere health seeker.

Without proper understanding or support, you could panic at these symptoms and believe your new diet or way of life is the cause of them. You might revert to your old unhealthy practices because you became afraid.

Thousands of people have experienced the same sort of problems as they improved their health. Books about fasting and dietary changes should be read so that you may feel reassured. Case histories, such as the one below, may help you understand these changes.

2.1 A Case History

Larry was a college junior and had become a vegetarian after graduating from high school. He had tried to improve his diet, but college life put him under stress and so he started drinking coffee in the evening to stay awake and study. After staying up late, he felt tense so he started smoking marijuana for relaxation and to get to sleep.

He also had little time to prepare lunch, so he got in the habit of eating a quart of fruit flavored yogurt for lunch every day.

When the summer came, Larry decided to kick his coffee and marijuana habits. The hot weather was also making him feel uncomfortable eating dairy products, so he gave up his daily yogurt. He had been suffering from sore throats and nasal congestion, and he changed over to a diet of raw fruits and vegetables to allow his body to cleanse itself.

The first day of his new diet Larry felt pretty good. He had distilled water for breakfast instead of the usual two cups of coffee and ate fresh fruits for lunch. He had a salad for supper and went to bed early to get plenty of rest. The next morning he woke up feeling miserable. He had a sharp headache that raced up his neck behind his ears. He could hardly breathe. His sinuses were clogged shut. He felt worse than he had in weeks.

The headache stayed all day and into the next day. Now he noticed he had developed a hacking cough that convulsed him. He started spitting up hardened balls of mucus from this lungs.

The third day his nose was continually draining. As fast as he could blow it, his nose would clog back up. All the time, his headache had never left him, even when he tried to sleep.

By the fourth day, the headache had subsided a little.

His cough had worsened, however, and now pieces of hardened gray material were being expelled from his lungs.

“I can’t stand it!” he thought, “Why am I feeling so miserable as soon as I gave up my bad habits?”

Why indeed? First, Larry’s headache is a symptom of caffeine withdrawal. Coffee, tea, cola drinks, and other caffeine-containing substances are addictive poisons. When a person drops his caffeine habit, changes occur in the vascular and nervous systems. These changes occur as the body tries to renormalize itself and eliminate the poisons. Headaches often accompany caffeine withdrawal, and some people who give up their coffee habit may experience edginess and irritability for a few days.

Larry’s clogged nose and sinuses were related to the consumption of dairy products. Mucus buildup occurs when milk is consumed. After such foods are eliminated, sinus drainage may occur for two weeks or more. The elimination of old mucus is a healthy sign for such deposits may become the breeding places for many diseases.

The coughing and spitting of hardened phlegm resulted from the cleansing of the lungs of the tar deposits which had been caused by smoking. Smokers lungs are often crusted black with tar and chemical deposits. When smoking is stopped, the lungs try to cleanse themselves and the old deposits are expelled by coughing. This is why a cough should never be suppressed. Coughing is one method that the body has of expelling toxic wastes from the system.

After about two weeks, Larry started to feel better than ever. He had plenty of energy without his coffee. His nose, throat, and lungs felt so much cleaner that he had no desire to smoke or eat dairy products. He had suffered for awhile, but now he was reaping the rewards of improved health.

2.2 Some of the Toxins in Your Body

Everybody is a walking time bomb. Each person carries within him the seeds for disease and illness. These seeds are the environmental and dietary toxins that may be stored within the body and which may spring full force into a debilitating disease.

What are some of these toxins, and where do they come from? How can we get rid of them? What symptoms can we expect when they start to leave the body?

2.3 Drug Toxins

Surprisingly enough, one of the largest sources of body toxins is the drugs people take to fight disease (or so they think). Medicinal drugs are very strong—they have to be to overcome the body’s natural defense system.

When such drugs are taken, they must either be eliminated from the body or stored within it for later elimination.

As a person’s health improves and all such medicines and drugs are discontinued, the old toxins may enter the bloodstream for elimination. The circulation of these old drug toxins in the system may produce bewildering symptoms that could alarm the health seeker.

For example, an elderly man had been taking a form of digitalis (a heart stimulant) for several years. He discontinued the drug as he improved his health through exercise.

After a few days off the drug, he experienced erratic heart beats, a racing pulse and chest pains. He was frightened and wondered if he should take his old drug again.

He was reassured that these symptoms were due to his body trying to renormalize itself and eliminate the old toxins from the heart drug. Sure enough, after a few days his heartbeat became steady and regular as the drug toxins were finally eliminated.

Every drug used, whether legal or illegal, leaves its mark upon the body. As the body regains health, the drug deposits are put into circulation for elimination. Since a combination of past drug deposits may enter the Bloodstream at once disconcerting symptoms may arise. Drug detoxification can be a lengthy process, but it will be aided by fasting and a diet high in fresh fruits.

Be forewarned: Old drugs that were taken even many years ago may reappear in the bloodstream as they leave fatty tissues and the organs. Drug toxin elimination may express itself in a series of rashes as they leave the body through the skin.

2.4 Caffeine and Nicotine

Heavy smokers or coffee drinkers may experience similar symptoms when they withdraw from their drug. Nervous irritability and emotional outbreaks are common symptoms of these drug addicts when they are detoxifying.

Nicotine and caffeine damage the nervous system and upset the vascular system, so symptoms such as headaches, edginess, and extreme lassitude may be expected. Such symptoms from these drugs usually lessen after three to ten days.

2.5 Salt and Other Condiments

Once salt use is stopped and the health improves, old salt deposits in the body exit through the skin and kidneys. Sometimes the elimination is so intense that a person may have a continual salty taste in the mouth for days. The skin may become crusted with salt or it may smell of the particular condiment that is being eliminated (such as onions, peppers, or vinegar).

In Mexico, corpses have been found in the desert that were untouched by buzzards and hyenas. The reason? The people had eaten such large quantities of hot peppers all their lives that their skins were actually too spicy for the scavengers to eat. Condiments can never be used by the body, and so they must either be stored or eliminated when the health is improved.

Salt elimination may also cause a temporary rise in blood pressure. People who go on salt-free diets may actually experience a slight increase in their blood pressure as the heavy elimination of salt begins. Later the blood pressure renormalizes itself and eventually becomes below the norm on a salt-free diet.

2.6 White Sugar Withdrawal

Eliminating sugar from the diet may make a person feel slightly nervous and hyperactive until the energy levels adjust to a sugar-free diet.

Mood changes, however, are usually more noticeable than any physical symptoms when sugar is eliminated. Reformed sugar addicts may feel periods of unaccountable depression as their blood sugar level tries to right itself. Getting off the sugar roller coaster, with its rapid rises and falls in blood sugar levels, is easier when a diet high in raw foods is followed. Such a diet renormalizes blood sugar levels and promotes tranquility of emotions.

2.7 Heavy Metal Elimination

Almost every person is poisoned by deposits of heavy metals in the body. Lead, aluminum, copper and arsenic collect in organs throughout the body. Because of their heavy weight, they are difficult to eliminate, and may cause discomfort as they leave the body.

Lead enters the body through auto exhaust, paints and canned foods. Aluminum may come from preparing or storing food in aluminum containers. Arsenic is present on sprayed foods, and so on.

Since these metals are heavy, they, tend to remain in the body until a cleansing diet or fast is followed. As these metals come out, headaches and a general achiness all through the body may occur. The gums may hurt and the kidneys may throb as these metals leave the organs and bones.

Occasionally, you can actually taste the metal that is being eliminated. Lead, especially often leaves a metallic taste on the tongue when it is leaving the body.

Heavy-metal poisoning can make you feel uncomfortable all over, and it is very common due to all the environmental toxins. As you eliminate these metals, bear the uncomfortable body aches and realize that they are leaving your body forever.

2.8 Meat-Eating and the Acid Body Condition

Meat-eating creates an acid condition in the body. When meat is eliminated, the body tries to reestablish its naturally-healthy, alkaline condition. As the acid condition of the body changes to one of alkalinity, symptoms may arise that may confuse the new vegetarian.

A sour, disagreeable odor may emit from the body as the acids leave or are neutralized. Hair may fall out and the breath may turn foul. Urine may be very dark and a sharp, bitter taste may be in the mouth.

Weakness of the arms and legs may occur. Many people contuse this weakness for protein deficiency. Instead, the weakness has resulted from a consumption of too much acid-forming protein in the past. The body’s energies are directed toward neutralizing these old toxins and so you may feel weak for a temporary period. Once the toxins are taken care of and an alkaline condition is reestablished, then strength returns to the limbs.

The discomfort of an over-acid body caused by meat-eating can be quickly overcome by a high-alkaline diet, such as fresh fruits and vegetables.

2.9 Specific Symptoms

Most people who change their diet and improve their health may experience one or more of the symptoms described below. Depending upon your past health, these symptoms may be mild or intense, short-term or long-term, temporary or recurrent.

As you improve your health, however, and stay on an optimum diet, all symptoms will gradually disappear.

Under no circumstances should these symptoms be halted by drugs.

Relief from some of these symptoms may come through fasting and rest primarily.

Moderate exercise is also beneficial, if your strength allows. Sleep and freedom from stress is vital.

Sunshine and fresh air will also aid in detoxification.

2.10 Headaches

A headache is the body’s chief warning signal of body toxicity. The toxic load in the body has increased so fast that poisons are circulating in the bloodstream and cause irritation to the brain and nerves.

Aspirin should never be taken for a headache. For some relief, lay down and rest with a cool, damp cloth across the eyes and forehead. Fasting may also help. Have someone massage the neck and temple. Avoid all stress at this time.

2.11 Upset Stomach and Diarrhea

When food is not being digested properly or is passing right through your body, then it is time to stop all food intake. This is your body’s way of telling you it doesn’t require any nourishment at this time, but instead is busy cleaning.

Careful food combinations and avoiding heavy foods are advised.

Diarrhea should not be halted by medicines. Rest and abstinence from food are your best resorts.

2.12 Constipation

A new diet may occasion temporary constipation. Brisk walking of at least one mile a day will help end this problem.

Eating foods naturally high in water and fiber will eventually remedy this condition. If little food is eaten, drink distilled water whenever thirsty.

On a diet of fruits and vegetables, constipation disappears, never to return.

2.13 Weight Loss

Weight loss is entirely normal when the diet is improved. Some individuals become alarmed when their weight falls rapidly. In most cases, this is not a cause for alarm.

From five to fifteen pounds of water weight alone may be lost when salt is completely eliminated from the diet. In some individuals, five to twenty pounds of old fecal matter may be eliminated from the colon. All of this is useless weight, and you should say, “Good riddance!”

The body will also try to eliminate all diseased tissue in an effort to rebuild a healthy body. It will try to strip itself down to the bare foundations and then begin to add on only healthy tissue.

Weight loss may occur for six months to a year. Exercises for muscle growth, such as weight lifting and swimming, will help rebuild the body with lean, muscular tissue. Be sure that your diet includes sufficient amounts of sweet fruits that are high in calories to balance out the low-calorie salads.

Usually, you can expect to weigh about twenty pounds less after you renormalize your body from the typical high-meat and fat diet of most Americans.

2.14 In General

Almost all the symptoms experienced during a dietary change are due to the body’s efforts to detoxify itself as rapidly as possible!

You can help in this process by fasting and getting plenty of rest. Be sure you get all the sleep you want and try to avoid stressful situations. During detoxification, you need as much peace and privacy as possible.

Never halt any symptom with medication. It will only reappear later in greater intensity.

Above all else, cultivate a positive attitude about what you are doing. Do not feel like you are punishing yourself or that you are making any great sacrifices. You are recovering your health, and that is the greatest reward that can be expected.

Realize that your sincere efforts will give you health beyond your expectations. Do not dwell upon your temporary discomforts. Instead, indulge in positive activity, such as exercise, gardening or helping others.

All symptoms will pass in time. The pain today will be a memory tomorrow. The discomforts you endure now mean an absence of suffering, later. You are healing yourself with your courage and wisdom. You have much to be thankful for.

No Pain No Gain

It has been a very difficult week. I do believe it is what I have called in the past discharging. Which is a form of detoxing off the old foods. I have to be honest this part of my recovery has been very scary. I have been nauseous and my appetite level has gone down in addition to the increase muscle and joint aches. I spoke with my counselor John yesterday and he asked why I did not increase my vitamin C the way he wanted me to. I guess I was a little worried that I would be taking to much. He assured me that he had one lady he was working with that was taking 250,000 mg a day. It got rid of her pain. He said she was much worse than I. I went to Sprouts yesterday and purchased the powder that was 500 mg per teaspoon. I took about 700 mg yesterday and it seemed to help.  He wants be to increase about 250 mg everyday until I become bowl intolerant.

In the meantime I have been using advil for the pain. However everything that I have been reading indicates that it slows the healing process. I hope to transition from advil to vitamin C. I just hope my appetite level increases. I have lost a lot of weight in the past few weeks. Just think a year ago I could not do anything to lose weight and now I can keep it from coming off. With little fat in the diet and lots of vegetables this is a normal part of the recovery process.

I have been fortunate to have many friends this week chip in and help with my food. Also to help me remain positive through this difficult time. If I feel okay on Saturday I hope to meet up  with a group of more Macrobiotic people in LA. A cooking class and a self diagnosis class. Hopefully that will help indicate my progress as I continue the journey of the macrobiotic lifestyle.

Support Helps Recovery

I wanted to share some of my experiences that may help family members and friends.  I do believe it makes all the difference in the world when you have family and friends that support you through this difficult time. Like the friend that takes the time to call you and ask how you are. Or the friend that comes over with a bowl of soup or gives you a good book to read. The one that picks you up to take you to a movie or takes you to the beach.  This type of support can really impact your recovery. The friends that say you look great. You have great color. You look the best I ever seen you. Those are the people to surround your self with. The positive influences in your life.

Then you have the friends that back away. Maybe because they are scared they are going to lose you. Or they are to busy with their life and don’t make the time. Or the ones that make negative remarks. Why are you not doing chemo? Or it looks like you are loosing to much weight. Or tells you stories of their friends that have died from cancer. Or the friend that gets mad because you did not seem happy to see her because you were having a bad day.

All I can tell you is there are many lessons I have learned through this experience.  Stick with the winners and detach with love  from the negative people in your life.

A winner is a friend that loves you unconditionally. On your good days and bad ones. One that takes the time to write a personalized message (not one of those forwarded ones)  or who will call you on the phone to see how you are doing. I have been fortunate to have some winners in my life. I have one family member that takes the time to come a visit once a week. Just to talk about old times and go to lunch. I have another friend that will call me up to go on walks or go to the beach. I have another friend that is willing to always make some extra food and drop it by when she gets the opportunity. Her husband even painted me a beautiful picture. I have another that calls each morning to check up on me. I had a whole group of friends that came over to visit me because I was having a real bad day. I really do believe you learn who your true friends are through difficult times.

I have told people before in my blog. When people ask if there is anything you need don’t hesitate to call. It is very general and we breast cancer survivors,  hate to ask for anything . It is better to say, I would love to come over and take you to lunch on Wednesday, or Can I help you with the laundry on Friday. Those are the ways to help people feel supported through the difficult times. Reach out today and support your friend and let her know you care.  Help her get better.

My Consultation

Day 2 I met with John to review my condition. I was experiencing a lot of pain in my groin and joints. John indicated that I had stagnation in my lower region of my abdomen. He informed me to increase my vitamin C and to do ginger compresses on my lower abdomen. In addition to hip baths with daikon leaves. He also suggested that I drink four 8 oz. Glasses of carrot juice a day. He also did acupressure on the inside of my ankle.

I know this all sounds very silly. But here it is almost a month after my counseling session and I am here to say it worked. I am not longer experiencing the pain I was experiencing before my session.

I asked John if I was getting worse and he said that I was getting better. My last consultation he said my adrenal glands were very weak and gave me a regimen of many different supplements to increase my immune system.

This has been quite a journey with my goods days and bad. I have to believe that I am healing each day on the road to a full recovery.

Day 2 at Conference

Day 2 started with breakfast and then a beautiful nature walk in the wood behind the Dolce center. After our was we went to the La Dolce vita-Macro Italian style cooking class with Christina Pirello.

Who doesn’t love Italian food? But is it healthy and in balance? With grains, beans, lots of vegetables and good quality fats as the foundation, Italian cuisine has it all.. and it’s easy, fun and great.

Farro Salad with Peas, Arugula and Tomatoes

White Beans in Spicy tomato Sauce

Tomato and Bread Salad with Roasted Red Onion

Chocolate “Panforte” Cups

Farrow Salad with Peas, Arugula and Tomatoes makes 2 servings

Ingredients

1 clove fresh garlic, crushed

¼ red onion, cut into small dice

½ cup farrow, rinsed well

1 cup spring or filtered water and sea salt to taste

½ cup fresh or frozen petite peas

8 to 10 cherry tomatoes, quartered

1 cup baby arugula

2 teaspoons extra virgin olive oil

Generous pinch cracked black pepper

2 tablespoons fresh lemon juice

Directions

1.Place garlic, onion, farro and water in a saucepan and bring to a boil over medium heat.

  1. Add a pinch of salt, cover and reduce heat to low.
  2. Cook until grain is tender and all the water has been absorbed, 25 to 30 minutes.
  3. While the farro is hot, stir in remaining ingredients and ½ teaspoon salt as the final seasoning.
  4. Transfer to a serving bowl and serve warm or at room temperature.

White Bean in Spicy Tomato Sauce makes 3 servings

Ingredients

2 teaspoons extra virgin olive oil

4 cloves fresh garlic, crushed

½ red onion, cut into small dice sea salt

generous pinch crushed red pepper flakes

2 tablespoons dry white wine

1 cup canned diced tomatoes

2 cups cooked or canned cannellini beans

4 sprigs fresh oregano, leaves removed, left whole

Directions

  1. Place oil, garlic and onion in a saucepan over medium heat.
  2. When the onion begins to sizzle, add a pinch of salt and saute`
  3. Add red pepper flakes and white wine and cook, stirring, until wine reduces to a syrup, about 3 minutes.
  4. Add tomatoes and beans and bring to a boil.
  5. Reduce heat and cook just until the beans become creamy, 15 to 20 minutes.
  6. Add 1 teaspoon salt and cook, stirring gently, for 3 to 5 minutes.
  7. Stir in oregano and transfer to a serving bowl.

Tomato and Bread Salad with Roasted Red Onion makes 2 servings

Ingredients

1 red onion, halved lengthwise, cut into thin half moon slices

2 cups green beans, ends trimmed, left whole

1 cup asparagus tips

3 tablespoons extra virgin olive oil

1 teaspoon sea salt

10 to 12 cherry tomatoes, halved

1 cup small dice cucumbers

3 cups baby arugula

3 cups 1 inch whole grain bread cubes

2 cloves fresh garlic, crushed

1tablespoon balsamic vinegar

2 teaspoons fresh lemon juice

3 to 4 springs basil, leaves removed, finely shredded

Directions

  1. Preheat oven to 425 degrees
  2. 2 Toss red onion, green beans and asparagus tips with 1 tablespoon of the oil and ½ teaspoon of the salt to coat. Spread vegetables on a shallow baking sheet and bake, stirring often, until tender and lightly browned at the edges, 12 to 15 minutes. Set aside to cool to room temperature.
  3. Combine tomatoes, cucumbers, arugula and bread cubes in a large bowl. Whisk

together remaining 2 tablespoons oil, remaining ½ teaspoon salt, garlic, vinegar, lemon juice and basil until emulsified.

  1. To serve, gently toss roasted vegetables and dressing into tomato mixture and
  2. Allow to marinate for about 30 minutes before serving to soften the bread a bit.

Chocolate ‘Panforte’ Cups

Make 18 cups

Ingredients

½ cup currants

1 cup boiling water

8 ounces non-dairy, grain sweetened chocolate chips

2 tablespoons brown rice syrup scant pinch ground cinnamon

3/1/2 tablespoon almond butter

Directions

  1. Lightly oil 18 candy\petit four cup liners.
  2. Soaak currants in boiling water for 5 minutes. Drain, pat currants dry and chop finely.
  3. Melt chocolate with rice syrup, cinnamon and 3 tablespoons almond butter in a metal bowl set over a pot of simmering water,stirring until smooth. Remove from heat and fol in currants.
  4. Spoon chocolate mixture into cups. Decorate tops of cups by dipping the end of a toothpick into remaining almond butter and swirling into the tops of each cup or placing a tiny dollop on top. Chill completely until ready to serve.

When on the healing diet it is best to stick to the healing diet. The variations are fine to have once your body has been healed from the cancer. At this time I am on a more restricted diet. Later during the day I had my consultation with my counselor John. Because of the extensive amount of information that was provided. I will share that with you next week.
